Head Chef, Central Kitchen Operations
Location: Tuas Region
Working Days: Monday to Friday
Working Hours: 9 hours 30 minutes per day, inclusive of 45 minutes lunch break. Flexible schedule. Rotating shifts where required.
Salary: $6,000 to $10,000, based on experience and capability
Own transport preferred.
Our client is seeking an experienced Head Chef to lead a large scale Central Kitchen operation. The role requires strong culinary leadership, operational management, and the ability to oversee both halal and non halal kitchen production. You will lead a team of 15 to 20 Sous Chefs and Cooks while ensuring high standards of food quality, hygiene, and operational efficiency.
Key Responsibilities
. Lead and oversee daily Central Kitchen operations to ensure efficient production and smooth workflow
. Ensure consistent food quality and timely fulfilment of orders across all channels
. Develop menus for customer enquiries, tenders, and business opportunities
. Conceptualise and develop new dining concepts for retail outlets and food services
. Support and oversee high profile catering events and large scale food services
. Evaluate new raw materials and suppliers to maintain quality and cost efficiency
. Prepare weekly ingredient and material forecasts to support purchasing plans
. Establish standard food costing and monitor actual costs against targets
. Maintain strict hygiene, food safety, and operational standards in the kitchen
. Manage manpower planning, labour cost, and productivity improvements
. Recruit, train, and lead a team of chefs, cooks, and kitchen assistants
Requirements
. Minimum 10 years of culinary experience in large scale F&B, hospitality, catering, or central kitchen environments
. Strong culinary expertise with proven ability to lead large kitchen teams
. Knowledge of food science and food production processes
. Familiar with the local foodservice industry including hospitality, healthcare, education, institutional catering, QSR chains, and food production environments
. Strong operational planning and execution capabilities
. Experience with systems such as MS Office, SAP, or other operational systems
. Good understanding of food costing, budgeting, and basic financial management
