Responsibilities:
- Supervise daily operations of the central kitchen, managing a team of 20 staff to ensure efficient workflow and smooth production.
- Create and recommend menu proposals for client enquiries, corporate events, and tender submissions.
- Conceptualize and develop new dining concepts and menu items for retail outlets.
- Ensure consistent food quality standards and oversee the timely preparation and delivery of orders.
- Lead and assist in the execution of large-scale and high-profile catering events.
- Evaluate and source new ingredients and suppliers to maintain quality while optimizing costs.
- Prepare weekly ingredient forecasts to support purchasing and inventory management.
- Implement standardized food costing and track actual expenses to keep within budget targets.
- Monitor labour costs while enhancing operational efficiency and productivity.
- Recruit, train, and mentor chefs, cooks, and kitchen assistants to strengthen the culinary team.
