Role Overview
The Head Baker will lead our bakery operations, driving product innovation and
ensuring excellence in production standards. This role requires a visionary baker
with strong expertise in R&D for modern bakery trends and a solid background in
viennoiserie techniques. You will oversee recipe development, production
processes, and team training, ensuring consistency, creativity, and efficiency across
all outlets.
Key Responsibilities
Product Innovation & R&D
Lead the development of new bakery products, focusing on modern techniques and
market trends.
Innovate within the viennoiserie category (croissants, brioche, laminated doughs),
balancing tradition with contemporary flavors.
Conduct trials, tastings, and feedback sessions to refine recipes.
Operational Leadership
Oversee daily production, ensuring quality, consistency, and efficiency.
Implement and maintain food safety, hygiene, and quality control standards.
Manage ingredient sourcing, inventory, and cost control.
Team Development
Train and mentor bakers in advanced techniques, especially in viennoiserie and
modern baking methods.
Foster a culture of creativity, collaboration, and continuous improvement.
Support HR in recruitment and onboarding of bakery staff.
Brand & Customer Experience
Collaborate with marketing and product teams to launch seasonal and signature
items.
Ensure bakery offerings align with brand identity and customer expectations.
Represent the bakery at industry events, workshops, and collaborations.
Requirements
Diploma/Degree in Culinary Arts, Baking & Pastry, or equivalent professional
certification.
Minimum 8–10 years of bakery experience, with at least 3 years in a leadership role.
Proven expertise in viennoiserie production (laminated doughs, enriched breads,
pastries).
Strong background in R&D and product innovation within modern bakery.
Knowledge of international bakery trends and ability to adapt them to local markets.
Excellent leadership, communication, and organizational skills.
Passion for artisanal baking and commitment to quality.
