Job Summary:
We are seeking a skilled and passionate Artisan Baker to craft high-quality, hand-made breads using traditional and innovative techniques. The ideal candidate has a deep understanding of fermentation, dough handling, and baking methods, producing breads that are not only delicious but visually appealing.
Key Responsibilities:
- Prepare, mix, and bake a variety of artisan breads including sourdough, baguettes, ciabatta, focaccia, and specialty seasonal breads.
- Develop and maintain recipes that uphold quality, flavor, and consistency.
- Handle ingredients with precision, focusing on high-quality, often organic or locally sourced materials.
- Manage fermentation, proofing, shaping, scoring, and baking processes.
- Monitor oven temperatures, baking times, and bread quality to ensure consistency.
- Maintain a clean, organized, and safe workspace adhering to hygiene and food safety standards.
- Collaborate with the culinary team to introduce new products or seasonal breads.
- Train and mentor junior bakers in artisan techniques and best practices.
- Maintain inventory and order ingredients as needed, minimizing waste.
Qualifications:
- Proven experience as a baker, preferably in artisan or high-end bread production.
- Strong knowledge of bread-making techniques, including sourdough fermentation, levains, and preferments.
- Familiarity with various grains, flours, and natural leavening methods.
- Excellent attention to detail and commitment to quality.
- Physical stamina to stand for long periods and handle heavy dough.
- Creativity and willingness to experiment with flavors, textures, and designs.
- Food safety and hygiene certification preferred.
