About the Role
We are looking for a passionate Sushi Chef to join our fine dining Japanese restaurant. You'll prepare high-quality, authentic dishes using premium ingredients, while working with the team to create a warm and memorable dining experience for our guests.
Responsibilities
. Prepare sushi and sashimi using proper techniques to ensure authentic taste and elegant presentation.
. Fillet and process whole fish, including all preparation and mise en place.
. Maintain cleanliness of workstation, tools, and equipment.
. Prevent cross-contamination and ensure proper food storage.
. Check ingredient quality and freshness (especially seafood).
. Engage with guests at the counter - explain dishes, make recommendations, and deliver a memorable dining experience.
. Maintain strict hygiene standards in line with HACCP requirements.
. Support daily kitchen operations and work as a team during service.
Requirements:
. Minimum 2 years of relevant experience in sushi preparation and culinary techniques.
. Experience with omakase or sushi counter service will be an added advantage.
. Good knife handling and food preparation skills.
. Strong knowledge of HACCP and food safety standards.
. Basic communication skills and a service-oriented attitude.
. Strong organisational, leadership, and teamwork skills.
. Flexibility to work split shifts, including weekends and public holidays.
