Job Description

The Stewarding Manager is responsible for overseeing stewarding operations across Universal Studios Singapore F&B outlets, ensuring the highest standards of cleanliness, sanitation, equipment care, and operational support for kitchen and service teams. The role includes managing outsourced stewarding contractors, monitoring departmental costs, and preparing the annual stewarding budget to support efficient and compliant operations in a high-volume theme park environment.

Job Responsibilities:

Operational Management

  • Oversee daily stewarding operations across all park kitchens, outlets, carts, and central facilities.
  • Ensure proper cleaning, sanitizing, and storage of kitchen equipment, utensils, and service ware.
  • Maintain cleanliness of all back-of-house areas including kitchens, receiving docks, and waste management zones.
  • Ensure readiness of stewarding operations during peak park attendance, special events, and seasonal activations.

Contractor & Workforce Management

  • Manage outsourced stewarding contractors including deployment, performance monitoring, and service quality.
  • Ensure contractors meet operational standards, hygiene compliance, and manpower requirements.
  • Work closely with vendors to ensure contract deliverables, staffing levels, and productivity targets are met.
  • Conduct regular performance reviews and service audits with stewarding contractors.

Team Leadership

  • Lead and coordinate stewarding teams to ensure adequate manpower coverage across park operations.
  • Provide training and guidance on hygiene standards, safety procedures, and equipment handling.
  • Foster strong collaboration between stewarding, culinary, and operations teams.
  • Hygiene & Compliance
  • Ensure compliance with SFA / NEA food safety regulations, HACCP standards, and company sanitation protocols.
  • Conduct routine sanitation inspections across all F&B outlets.
  • Ensure safe handling of cleaning chemicals and proper usage of stewarding equipment.
  • Maintain documentation and readiness for hygiene and food safety audits.

Cost Control & Budget Management

  • Monitor stewarding department operating costs including manpower, chemicals, utilities, and equipment maintenance.
  • Track contractor expenses and ensure cost efficiency while maintaining operational standards.
  • Prepare and manage the annual stewarding budget, including forecasting of manpower, supplies, and equipment needs.
  • Implement cost control measures to reduce wastage, breakage, and operational inefficiencies.
  • Inventory & Equipment Management
  • Manage inventory of stewarding supplies including chemicals, cleaning tools, and small wares which includes kitchen utensils and plates
  • Oversee maintenance and functionality of dishwashing machines and stewarding equipment.
  • Coordinate preventative maintenance and repairs with engineering teams.
  • Waste & Sustainability Management
  • Manage waste segregation, recycling programs, and food waste disposal processes.
  • Support environmental sustainability initiatives across park F&B operations.

Event & Peak Operations Support

  • Support large-scale park events, festivals, and special functions.
  • Ensure stewarding manpower and operational readiness during high-volume service period.

Requirements:

  • Minimum 58 years of stewarding experience, with 23 years in a supervisory or managerial role.
  • Experience in high-volume hospitality operations (theme parks, integrated resorts, hotels, or large F&B complexes) preferred.
  • Experience managing outsourced stewarding vendors and service contracts.
  • Strong knowledge of food safety regulations, sanitation standards, and HACCP.
  • Experience in budget preparation and departmental cost monitoring.
  • Strong leadership, communication, and operational management skills.
  • Able to work flexible hours including weekends, public holidays, and peak park seasons.
