about the role

Semolina is a modern Indian street food concept focused on bold flavours, speed, and consistency. We're looking for a Sous Chef who can take ownership of the kitchen floor, support the head chef, and ensure standards are maintained at all times.

This role is not just about cooking - it's about leading service, managing the team, and keeping operations tight.

what you'll be doing

  • Support the head chef in overseeing daily kitchen operations
  • Take charge of the kitchen in the head chef's absence
  • Ensure all dishes meet quality, consistency, and presentation standards
  • Supervise and guide line cooks during prep and service
  • Manage mise en place, station readiness, and service flow
  • Monitor stock levels, support ordering, and control wastage
  • Enforce hygiene, food safety, and cleanliness standards across the kitchen
  • Train and support junior team members to improve performance
  • Step into service during peak periods to maintain speed and efficiency

  • Proven ability to manage a kitchen or lead a section independently
  • Strong understanding of kitchen operations, not just cooking
  • Calm under pressure and able to make quick, practical decisions during service
  • Leads by example - sets the standard for pace, cleanliness, and discipline
  • Strong communication skills and ability to manage different personalities
  • Takes ownership and doesn't wait to be told what to do
  • Committed to a 6-day work week, including weekends and public holidays

requirements

  • Prior experience as a Sous Chef, Senior Line Cook, or similar leadership role
  • Experience in Indian or South Asian cuisine preferred
  • Good knowledge of food safety, hygiene, and kitchen best practices
  • Strictly open to Singaporeans and PR only (no work pass quota available)
