Job Responsibilities:

  • Lead and oversee kitchen operations specializing in authentic Hunan (Xiang) cuisine.
  • Develop and design traditional and innovative Hunan-style dishes that emphasize bold flavors and spicy profiles.
  • Manage ingredient sourcing, inventory control, and kitchen cost efficiency.
  • Supervise kitchen staff, ensure hygiene standards (SFA & NEA compliance), and maintain food consistency.
  • Coordinate with front-of-house team for menu planning and daily operations.
  • Train junior chefs in cutting, seasoning, and wok control techniques typical of Hunan cooking.

Requirements:

  • Minimum 5 years of professional experience as a Hunan cuisine chef or head cook.
  • Proven ability to manage kitchen teams and maintain high culinary standards.
  • Knowledge of Hunan regional ingredients, chili oil, and curing/pickling methods.
  • Able to work in a fast-paced environment and handle high-volume service.
  • Diploma or equivalent culinary certificate preferred.
  • Willing to work weekends and public holidays.
