About the Role
You will play a key leadership role in managing food service operations within a large institutional healthcare environment, ensuring quality, safety, efficiency, and service excellence for patients, staff, and catering services.
Key Responsibilities
Operations Management
Oversee daily food service operations including control room, store, catering, dishing, and assembly
Work closely with the Executive Chef and production team on inpatient, staff, and catering meals
Ensure smooth coordination between kitchen operations and administrative functions
Manpower & Vendor Management
Manage manpower hiring, deployment, and mobilisation
Oversee food service contracts and monitor vendor performance to ensure compliance
Conduct monthly payment checks for stewarding services
Safety, Quality & Compliance
Manage food safety, workplace safety, and fire safety risks
Ensure emergency preparedness and business continuity planning
Maintain proper documentation and operational records
Service & Reporting
Handle escalated patient feedback and service recovery
Prepare and submit monthly food service reports for management review
Projects & Improvements
Lead initiatives on workflow improvement, automation, waste reduction, harmonisation, and sustainability
Support ad-hoc projects assigned by management
Who We're Looking For
Degree in Food & Beverage Management, Hospitality, Nutrition, or a related field
At least 5 years of supervisory/managerial experience in hospital, hotel, restaurant, or high-volume food service operations
Strong knowledge of food safety, hygiene, and operational standards in institutional or healthcare settings
Certifications such as WSQ Food Hygiene, Food Hygiene Officer (FHO), HACCP / ISO 22000 will be highly advantageous
Knowledge of Halal compliance and MUIS requirements is an added advantage
Workplace safety certifications (e.g., WSH, ISO 45001, Fire Safety training) will be a plus
Experience in contract/vendor management is advantageous
Comfortable managing both kitchen operations and administrative reporting
Proficient in Microsoft Office tools
