We are seeking an exceptionally seasoned tolead and sustain a high-volume, high-complexity F&B operation that runsintensive 12-hour daily shifts and operates until 3:00 AM / 4:00 AM / 6:00 AM.This role demands uncompromising operational discipline, strategic foresight,and the ability to execute consistently under extended working hours anddynamic peak-load conditions.
The ideal candidate is a rare calibreoperator capable of driving multi-unit coordination, enforcing stringent SOPs,and steering a large frontline workforce while maintaining superior service,safety, and compliance standards.
Key Responsibilities
1. Operational Leadership & Execution
Oversee full-spectrum daily operationsacross late-night and early-morning windows, ensuring uninterrupted serviceduring extended (12-hour) shifts.
Architect, implement, and enforce advancedStandard Operating Procedures (SOPs) for food production, service flow, cashmanagement, shift rotations, and inventory control.
Conduct real-time troubleshooting ofoperational bottlenecks, labour constraints, supply disruptions, andafter-midnight safety contingencies.
Lead store opening, mid-shift, and closingprocesses under high-fatigue conditions with zero tolerance for deviation.
2. Workforce Management
Manage and deploy a large multi-nationalteam across long-hour rotational schedules, late-night shifts, and high-demandperiods.
Execute advanced manpower modelling forpeak, off-peak, and graveyard-hour performance.
Drive continuous upskilling, discipline,and productivity optimisation through structured training programmes.
3. Quality, Compliance & SafetyGovernance
Enforce end-to-end adherence to SFA, NEA,WHS, and all food safety regulatory frameworks.
Oversee HACCP-level standards for hygiene,sanitation, allergen handling, and temperature controls.
Ensure after-midnight operational safety,including fatigue-risk management, crowd control, and incident escalationprotocols.
4. Financial & Commercial Stewardship
Own P&L performance, cost-to-labourratios, shrinkage controls, and procurement optimisation.
Implement advanced demand forecasting fordeep-night consumption patterns.
Drive revenue strategies including menuengineering, limited-time offerings, and throughput enhancement.
5. Strategic Operations Development
Lead process re-engineering initiatives toimprove operational throughput, service speed, and labour efficiency duringextended shifts.
Evaluate and deploy digital systems fororder management, smart scheduling, inventory automation, and data-drivendecisioning.
Steward continuous operational excellencein a high-pressure, long-hours customer environment.
Requirements (High Bar / SelectiveCriteria)
Essential Qualifications
Minimum 5 years of senior-level F&B ormulti-outlet operations leadership.
Proven track record managing late-night /24-hour / high-volume environments with extended working hours.
Deep expertise in F&B compliance,SFA/NEA regulations, food safety frameworks, and workforce governance.
Strong crisis-management ability andoperational resilience under fatigue-intensive conditions.
Role Intensity Requirements
Ability and willingness to work 12-hourshifts regularly.
Readiness to oversee operations that closeat 3 AM / 4 AM / 6 AM, including physical presence on site.
High psychological stamina, strongdiscipline, and ability to maintain precision in prolonged operations.
