We are seeking an exceptionally seasoned to lead and sustain a high-volume, high-complexity F&B operation that runs intensive 12-hour daily shifts and operates until 3:00 AM / 4:00 AM / 6:00 AM. This role demands uncompromising operational discipline, strategic foresight, and the ability to execute consistently under extended working hours and dynamic peak-load conditions.
The ideal candidate is a rare calibre operator capable of driving multi-unit coordination, enforcing stringent SOPs, and steering a large frontline workforce while maintaining superior service, safety, and compliance standards.
Key Responsibilities
1. Operational Leadership & Execution
Oversee full-spectrum daily operations across late-night and early-morning windows, ensuring uninterrupted service during extended (12-hour) shifts.
Architect, implement, and enforce advanced Standard Operating Procedures (SOPs) for food production, service flow, cash management, shift rotations, and inventory control.
Conduct real-time troubleshooting of operational bottlenecks, labour constraints, supply disruptions, and after-midnight safety contingencies.
Lead store opening, mid-shift, and closing processes under high-fatigue conditions with zero tolerance for deviation.
2. Workforce Management
Manage and deploy a large multi-national team across long-hour rotational schedules, late-night shifts, and high-demand periods.
Execute advanced manpower modelling for peak, off-peak, and graveyard-hour performance.
Drive continuous upskilling, discipline, and productivity optimisation through structured training programmes.
3. Quality, Compliance & Safety Governance
Enforce end-to-end adherence to SFA, NEA, WHS, and all food safety regulatory frameworks.
Oversee HACCP-level standards for hygiene, sanitation, allergen handling, and temperature controls.
Ensure after-midnight operational safety, including fatigue-risk management, crowd control, and incident escalation protocols.
4. Financial & Commercial Stewardship
Own P&L performance, cost-to-labour ratios, shrinkage controls, and procurement optimisation.
Implement advanced demand forecasting for deep-night consumption patterns.
Drive revenue strategies including menu engineering, limited-time offerings, and throughput enhancement.
5. Strategic Operations Development
Lead process re-engineering initiatives to improve operational throughput, service speed, and labour efficiency during extended shifts.
Evaluate and deploy digital systems for order management, smart scheduling, inventory automation, and data-driven decisioning.
Steward continuous operational excellence in a high-pressure, long-hours customer environment.
Requirements (High Bar / Selective Criteria)
Essential Qualifications
Minimum 5 years of senior-level F&B or multi-outlet operations leadership.
Proven track record managing late-night / 24-hour / high-volume environments with extended working hours.
Deep expertise in F&B compliance, SFA/NEA regulations, food safety frameworks, and workforce governance.
Strong crisis-management ability and operational resilience under fatigue-intensive conditions.
Role Intensity Requirements
Ability and willingness to work 12-hour shifts regularly.
Readiness to oversee operations that close at 3 AM / 4 AM / 6 AM, including physical presence on site.
High psychological stamina, strong discipline, and ability to maintain precision in prolonged operations.
