Helmed by Chef Takeshi Nakayama, Shin Terroir is a Japanese yakitori omakase restaurant in Singapore that highlights seasonality, ingredient quality, and traditional grilling techniques throughout its menu. At the heart of the restaurant is a custom three-tier grill from Osaka, where skewers are cooked over Wakayama oak binchtan charcoal to bring out clean, balanced flavours. The dining experience is complemented by a carefully curated beverage program featuring Champagnes and Burgundies, selected to enhance each course.

Job Overview

We are looking for a motivated and disciplined Commis Chef. The Commis Chef will support the kitchen team in daily operations, assist in food preparation, and learn proper Japanese cooking techniques under the guidance of senior chefs. This role is ideal for someone eager to build a solid foundation in a structured kitchen environment.

Key Responsibilities
. Assist in daily food preparation and mise en place for assigned sections
. Support Chef de Partie and senior chefs during service
. Prepare ingredients according to Japanese kitchen standards (cleaning, trimming, portioning, skewering)
. Assist with basic cooking tasks, including grill support when required
. Maintain cleanliness, hygiene, and organisation of workstations
. Follow FIFO and proper storage procedures for all ingredients
. Assist with receiving and storing deliveries, especially Japanese products
. Communicate clearly with the kitchen team during preparation and service
. Learn and follow standard operating procedures, recipes, and plating standards

Requirements
. Basic kitchen experience or culinary training preferred (but not mandatory)
. Strong interest in Japanese cuisine and willingness to learn
. Positive attitude, discipline, and attention to detail
. Ability to work in a fast-paced environment
. Willingness to follow instructions and kitchen standards
. Understanding of basic hygiene and food safety practices
