We are looking for a Chef de Cuisine (South Italian Cuisine) to join our team!

Job Responsibilities

  • Lead, supervise, and oversee the South Italian kitchen, ensuring excellence in flavour, presentation, and consistency.
  • Create and execute authentic Southern Italian dishes, including regional specialties from Sicily, Calabria, Apulia, and Campania.
  • Oversee pizza production, including dough fermentation, shaping, topping balance, baking, and quality control for Neapolitanstyle and other Italian pizzas.
  • Develop and refine menus, seasonal specials, and signature dishes aligned with hotel standards and South Italian culinary traditions.
  • Manage daily miseenplace, ensuring proper preparation, freshness, and timely replenishment of ingredients.
  • Train, mentor, and supervise kitchen team members to uphold culinary standards and operational efficiency.
  • Collaborate with procurement to ensure highquality ingredients, particularly Italian cheeses, meats, seafood, tomatoes, olive oils, and flours.
  • Ensure the proper use, cleaning, and maintenance of pizza ovens, kitchen equipment, and workstations.
  • Maintain strict compliance with food safety, hygiene, HACCP standards, and kitchen sanitation procedures.
  • Support overall kitchen operations, cost control, waste reduction, and smooth coordination with service teams during peak periods.

Job Requirements

  • Minimum 10 years of culinary experience, with strong exposure to South Italian cuisine and at least 5 years in a supervisory or similar leadership role.
  • Strong expertise in Italian pizza making, including dough fermentation techniques, woodfired/stoneoven baking, and Neapolitanstyle methods.
  • Deep knowledge of Southern Italian ingredients, flavour profiles, and traditional culinary techniques.
  • Proven ability to innovate while maintaining authenticity in Italian cuisine.
  • Strong leadership, communication, and teamdevelopment skills.
  • Ability to work in a fastpaced, highvolume environment while maintaining quality and consistency.
  • Good understanding of kitchen operations, cost management, and inventory control.
  • Strong knowledge of food hygiene, safety standards, and HACCP guidelines.
