Job Description

Shao La Chef / 烧腊厨师

Position: Shao La Chef (Chinese Roast Meat Specialist)
Working Hours: 12 hours per day
Working Days: 6 days per week
Location: Singapore

Job Responsibilities

  • Independently handle the full preparation and production of traditional Chinese Shao La / 烧腊

  • Prepare and roast Char Siew, Roast Pork (Sio Bak), Roast Duck and Roast Chicken

  • Responsible for marinating, seasoning, hanging, roasting and finishing of meats

  • Prepare sauces, marinades and seasoning according to the company's required taste and recipe

  • Monitor roasting temperature, timing, colour, texture and consistency

  • Perform chopping and portioning of roast meats during service

  • Handle raw meat preparation and heavy kitchen work

  • Maintain strict cleanliness and food hygiene standards

  • Responsible for cleaning own work area, roasting equipment and kitchen equipment

  • Assist with stock receiving, storage and inventory when required

  • Perform other kitchen duties assigned by management

Requirements

  • Minimum 5 years of hands-on Shao La / Chinese roast meat experience

  • Must be able to independently manage the entire Shao La production process without supervision

  • Strong experience in roast duck, char siew and crispy roast pork is essential

  • Must possess good knife and meat-chopping skills

  • Able to work efficiently in a hot, physically demanding kitchen environment

  • Able to handle heavy ingredients and stand for long working hours

  • Must be willing to work weekends and public holidays

  • Early reporting or extended hours may be required depending on preparation and business requirements

  • Applicants without substantial hands-on Shao La experience will not be considered
