Mondays to Fridays: 7am to 4.30pm
Coordinate daily bakery operations, manpower scheduling, inventory management, food supplies and food wastage control.
Key Responsibilities
- Prepare and bake a wide range of artisanal breads, pastries, cakes, desserts, and specialty baked items to premium quality standards.
- Ensure all products are fresh, visually appealing, and consistently executed according to recipes and brand standards.
- Manage daily mise en place and production schedules to meet breakfast, buffet, banquet, afternoon tea, and la carte service demands.
- Maintain strict food safety, hygiene, and sanitation standards at all times.
- Monitor stock levels, ingredient freshness, and proper storage practices.
- Minimise wastage through effective planning and portion control.
- Support menu development with creative seasonal and luxury-standard baked offerings.
- Ensure kitchen equipment is operated safely and maintained in good working condition.
- Work closely with Pastry Chef, Sous Chef, and culinary team to deliver seamless service.
- Maintain a clean, organised, and professional bakery workspace.
- Train and guide junior team members when required.
- Uphold grooming, professionalism, and service culture aligned with five-star hospitality expectations.
Requirements
- Proven experience as a Baker in hotel, luxury restaurant, premium bakery, or high-volume quality-driven environment.
- Strong knowledge of bread fermentation, lamination, pastry techniques, and baking methods.
- Ability to work in a fast-paced environment while maintaining precision and consistency.
- Good understanding of food safety and HACCP practices.
- Creative mindset with attention to detail and presentation.
- Positive attitude, teamwork, and strong work ethic.
