Job Summary
We are seeking an experienced and passionate Head Baker to lead our production team. You will be responsible for overseeing the daily baking operations, ensuring consistent quality, and managing a team of bakers in a high-volume environment.
Responsibilities
- Lead large-scale production of artisanal breads, pastries, and specialty loaves to meet volume and quality targets
- Enforce strict quality control and food safety standards (HACCP) to ensure product safety and compliance
- Monitor and adjust oven temperatures, proofing times, and ingredient ratios to maintain consistent product quality
- Train, supervise, and develop junior baking staff to enhance team performance and skills
- Manage inventory levels and implement waste reduction strategies to optimize raw material usage
- Operate industrial-grade mixers, dividers, and deck/rotary ovens efficiently to support production demands
- Demonstrate strong leadership to coordinate team efforts and meet tight production deadlines
- Adapt work schedule to accommodate early morning or night shifts as required
Preferred competencies and qualifications
- Proven experience as a Lead/Head Baker in a commercial bakery or factory
- Deep knowledge of dough fermentation, hydration, and flour types
