Job Description
- Oversee daytoday operations across preparation, cooking, chilling, assembly, and packing processes.
- Plan production schedules, manage manpower allocation, and ensure strict compliance with recipes and quality standards.
- Monitor critical control points such as cooking temperatures, blast chilling performance, and coldchain handling.
- Enforce GMP, HACCP, allergen management, sanitation programs, and quality assurance protocols.
- Record process deviations, initiate corrective actions, and support traceability activities including mock recalls.
- Lead and supervise Production Supervisors, Line Leads, and 50-150+ hourly staff, including training, scheduling, and performance communication
- Track operational metrics such as OEE, yield, waste levels, and line efficiencies.
- Facilitate problemsolving sessions, implement 5S/visual management, and drive continuous improvement efforts.
- Reinforce workplace safety, PPE usage, and compliance in coldroom environments. Conduct safety audits and incident investigations.
- Oversee raw material staging, WIP control, finishedgoods rotation (FEFO), and cycle count accuracy.
Job Requirements
- Practical experience with cookchill systems, blast chilling, thermal processing, and MAP technologies. Knowledge of food microbiology, shelflife testing, and coldchain management.
- Strong leadership, communication, analytical thinking, and project management skills ability to operate under pressure.
- Comfortable working in refrigerated environments (40-45F), standing/walking for extended periods, lifting up to 40 lbs, and supporting offhours operations when needed.
