Job Description

DUTIES AND RESPONSIBILITIES:

Employee Engagement

  • Conducts weekly training to ensure that Restaurant & Bar, Club and Beverage team member have the right skills & knowledge to perform effectively.
  • Conducts line up at the beginning of every meal period to share and review all information pertinent to the day's operation.
  • Monitors colleagues performance and provide feedback on their performance.
  • Involves colleagues in the decision making process that affects their work.

Guest Engagement

  • Gives suggestion to the team to recommend wine pairing to enhance their dining experience.
  • Helps the team to anticipate and meet the needs and unexpected wishes of every guest.
  • Helps the team to monitor and respond in a timely manner to guest reactions whenever required.
  • Helps the team in handling and resolving guest opportunities as soon as possible (within a 24 hour period if not solved immediately).
  • Leads the team in collecting, compiling and analyzing guest comment cards to improve productivity, product and service quality.

Operation

  • Ensures that all standards and procedures for the operation are followed in the front and heart of the house set up before, during and after operation.
  • Ensures cleanliness of all work areas at all times in the front and heart of the house.
  • Identifies and eliminates defects which compromise standards & procedures.
  • Assigns work & side duties, opening & closing tasks to be completed for an effective restaurant & bar and club operation.
  • Updates and records wine inventory regularly.
  • Assists the chef sommelier with inventory and stock matters.
  • Assists the Chef sommelier with purchasing matters for the department.
  • Ensures security of work environment, such as glasses, decanters etc.

Administration

  • Helps to update the Wine Menu regularly to maximize patronage & profitability.
  • Updates the menu & POS System regularly.
  • Establishes par levels, conduct inventory for supplies & equipment.
  • Completes a log at the end of every meal period. Review the log daily and respond to all inquiries and opportunities.
  • Engages the chef sommelier to assist in negotiating wine contracts including accessories and promotional materials & manning.
  • Continuously be aware and adapt to the latest trends and best practices in Restaurant, Bar & Nightclub industry to maximize patronage and revenue.

JOB REQUIREMENTS:

Education

  • WSQ relevant certifications.
  • Relevant Sommelier education

Experience

  • Minimum 5 years of Sommelier roles in fine dining/ luxury operations.
  • International or Opening experience is an advantage.

Required Knowledge

  • Food & wine knowledge.
  • Proficient in spoken & written English.
  • The ability to speak and write in a 2nd language is an advantage.
  • Proficient in MS Office & Micros.

Physical Requirements / Work Environment

  • Able to lift up to 10KG without assistance.
  • Able to work on a 24 hour rotating shift.
  • Able to work weekends & public holiday.
  • Able to work standing up to 8 hours straight
