Role Overview
We are looking for a Culinary R&D & Production Chef to lead menu development, recipe standardisation, and large-scale food production for our central kitchen operations.
This role bridges culinary creativity with production efficiency, ensuring dishes can be produced consistently at scale for catering, ready-to-eat meals, and institutional clients.
Key Responsibilities
Develop and innovate menu concepts for catering and ready-to-eat products
Conduct menu engineering and food cost analysis to ensure profitability
Design recipes suitable for batch production and central kitchen operations
Convert recipes into scalable batch production (1001000+ portions)
Standardise recipes with exact measurements, yields, and cooking procedures
Create recipe documentation and production SOPs
Conduct food trials, testing, and product development for new menu items
Work closely with operations and kitchen teams to ensure consistent execution
Adapt recipes for central kitchen production and automation equipment
Lead culinary development for new product launches and menu improvements
Requirements
Minimum 58 years culinary experience
Experience in central kitchen / catering / food production is a must.
Strong understanding of batch cooking and large-scale food preparation
Experience in menu development and recipe standardisation
Knowledge of food safety and HACCP standards
Preferred experience:
Ready-to-eat meals / frozen food production
Institutional catering
Food factory operations
