Job Description:
Perform incoming raw material inspection, in-process quality checks, and finished product testing (including retention samples).
Maintain and update HACCP, GMP, and sanitation standard operating procedures (SSOPs).
Conduct daily hygiene audits, swab tests, and calibration of monitoring devices (thermometers, pH meters).
Manage non-conforming product disposition and lead root cause analysis for quality deviations.
Keep complete food safety documentation including CCP records, traceability, and supplier COAs.
Train production staff on personal hygiene, allergen control, and foreign body prevention.
Requirements:
3+ years of quality assurance experience in central kitchen, food processing, or catering.
Certified HACCP or PCQI (Preventive Controls Qualified Individual) strongly preferred.
Hands-on experience with microbiology or chemistry lab testing (water activity, salt content, etc.).
Meticulous and data-driven ability to write clear non-conformance reports.
Strong knowledge of local food safety laws and certification standards.
Associate or bachelor's degree in Food Science, Microbiology, or related field.
