Job Summary
The Head Chef leads kitchen operations, ensuring authentic Korean cuisine quality and customer satisfaction. This role requires strong leadership to manage staff, develop menus, control costs, and maintain hygiene standards.
Responsibilities
- Lead kitchen operations and manage all kitchen staff to ensure efficient workflow and high performance
- Maintain the quality, flavor, and visual presentation of dishes including meat preparation, stir-fried dishes, stews, and hot pots to uphold culinary standards
- Train, mentor, schedule, and evaluate kitchen team members to build a skilled and motivated workforce
- Develop new menu items and plan seasonal dishes to innovate while respecting Korean culinary traditions
- Manage ingredient procurement, inventory, and cost control to optimize kitchen resources and profitability
- Ensure strict compliance with hygiene and food safety standards to maintain a safe and clean kitchen environment
- Collaborate closely with the service team to coordinate dish-out timing and enhance overall customer satisfaction
- Maintain and refine the restaurant's culinary direction consistent with the brand concept to strengthen market positioning
- Respond promptly to and resolve issues related to manpower, quality, or service within the kitchen to sustain smooth operations
Required competencies and certifications
- Minimum 8 years of professional experience in authentic Korean cuisine, including at least 2 years in a managerial or Head Chef role
- Broad knowledge of traditional Korean cuisine, BBQ, set meals, and modern Korean dining
- Strong experience in ingredient management, cost analysis, and purchasing systems
- Proven ability to train, supervise, and motivate kitchen staff
- Ability to communicate in English or Mandarin at a basic working level
Preferred competencies and qualifications
- Prior experience at overseas Korean restaurants or Michelin-recommended establishments
- Proficiency in Korean, especially for communication with Korean staff
- Creative sense for developing new menus while respecting Korean culinary traditions
- Strong sense of plating and presentation aligned with the brand's concept
- Passion and commitment to grow long-term with the brand
