Barely Aged was started in 2025, as a casual wine & cheese bar concept in Robertson Quay, positioned to become a leading destination for wine culture in Singapore. It is a 25 seater concept, with plans to add outdoor seating sometime in the second half of 2026
The concept is built around thoughtful curation, relaxed sophistication, and genuine hospitality. We focus on small producers, expressive wines, and elevated yet approachable experiences
We are seeking a commercially minded, hands-on General Manager / Sommelier to lead Barely Aged as a standalone business unit.
This role goes beyond operations-you will be responsible for owning the performance of the outlet, building a strong team culture, and delivering a consistently high-level guest experience that reflects the brand.
You should be equally comfortable on the floor engaging guests, as you are managing listings, driving revenue, and planning staffing schedules for the rest of the Barely Aged team
Service & Guest Experience
Set and uphold exceptional service standards aligned with a premium-casual wine bar experience
Act as the face of Barely Aged-hosting guests, building relationships, and creating regulars
Handle guest feedback and recovery with professionalism and care
Continuously refine the guest journey from arrival to departure
Team Leadership & Culture
Train, and develop a high-performing front-of-house team
Build a strong, accountable, and positive team culture
Set clear expectations and ensure consistent execution across shifts
Lead by example on the floor-this is a hands-on role
Operations & Standards
Oversee daily operations including opening/closing, reservations, and service flow
Ensure cleanliness, hygiene, and compliance with Singapore regulations
Manage inventory across wines, cheeses, and retail products
Work with suppliers and internal teams to maintain product quality and availability
Wine & Product Leadership
Maintain a strong understanding of the wine list and cheese offerings
Collaborate on menu curation, pricing, and seasonal updates
Support retail integration (take-home bottles, cross-selling)
Strong operational and commercial acumen (you understand numbers, not just service)
Proven ability to lead and develop teams
Passion for wine and hospitality (formal certification is a plus, not a must)
Confident communicator with strong guest engagement skills
Comfortable working evenings, weekends, and public holidays
Has worked in wine bars, bistros, or premium-casual dining concepts
Understands how to balance experience + profitability
Detail-oriented but not rigid service-driven but commercially aware
