Position Overview:
The F&B Training and Compliance Executive is responsible for designing, implementing, and maintaining effective training and compliance programs across multiple F&B concepts. This includes a cocktail drink and a beverage & dessert outlet offering juice drink, smoothies, and ice cream. The role ensures staff competency, adherence to food safety and regulatory standards, and operational consistency tailored to each outlet's unique offerings.
This position is ideal for a detail-oriented individual with a strong foundation in food & beverage training, compliance auditing, and multi-concept operational support.
Key Responsibilities:
1. Multi-Concept Training & Development
- Design and deliver customized training programs for diverse F&B concepts, including:
Cocktail preparation and mixology.
Responsible alcohol service (e.g., ID checks, intoxication protocols).
Beverage and Dessert preparation. - Conduct skills assessments and identify gaps in service, product knowledge, or operational processes.
- Train staff in areas such as:
Product preparation and presentation.
Customer service excellence and upselling techniques.
Hygiene, food handling, and cleanliness standards. - Coordinate and facilitate onboarding programs for new hires and ongoing refresher courses for existing team members.
- Maintain updated training manuals, SOPs, and visual aids across all outlets.
2. Compliance & Quality Assurance
- Ensure strict adherence to all food safety, hygiene, occupational safety, and liquor licensing regulations across both cocktail and dessert & beverage outlets.
- Conduct regular audits, inspections, and spot checks to assess compliance and operational readiness.
- Oversee proper storage, handling, and display of perishable items such as dairy, fresh fruits, and juices.
- Monitor alcohol service protocols, including:
ID verification.
Monitoring guest sobriety.
Staff awareness of legal obligations. - Stay up to date with changes in F&B compliance regulations, ensuring proactive updates to processes and training.
3. Operational Support & Collaboration
- Work closely with outlet managers to align training content and compliance requirements with daily operations and business goals.
- Support new product launches, seasonal promotions, and menu changes with relevant training sessions and compliance briefings.
- Assist in resolving operational or service-related issues that involve quality, hygiene, or safety concerns.
- Collaborate with the procurement and quality control teams to ensure all products meet safety and consistency standards.
4. Reporting & Documentation
- Maintain comprehensive records of:
Training sessions, attendance, and certifications.
Internal audit results and follow-up actions.
Compliance incidents and corrective actions taken. - Prepare regular reports for senior management on training effectiveness, compliance status, and recommended improvements.
5. Ad-Hoc Duties
- Perform additional tasks or assignments as required by superiors, including urgent operational needs or special projects.
- Support new outlet openings, system implementations, or company-wide training initiatives when needed.
Key Requirements:
- Diploma or degree in Hospitality Management, Food Science, or a related field is preferred.
- At least 2 years of experience in F&B training or compliance, with exposure to both cocktail drink and beverage & dessert operations.
- In-depth knowledge of food hygiene and safety standards, liquor licensing regulations, and SFA/NEA guidelines.
- Strong presentation and facilitation skills with the ability to adapt training for different teams and learning styles.
- Excellent interpersonal and communication skills to engage both front-line staff and management.
- Highly organized with attention to detail and the ability to handle multiple tasks across varied concepts.
