Position Overview
The Director of Mixology is responsible for leading the beverage strategy, cocktail innovation, bar operations, and guest experience across all outlets. This role oversees the development of signature beverage programs, elevate the hotel's positioning in the market through the beverage program, property, brand and local events that are value adds for all stakeholders and define a culture of excellence, cost management, team training, developing the next generation of bartenders and beverage affecianados, supplier partnerships, and operational excellence while ensuring the highest standards of quality, service, and profitability.
The Role
Beverage Operations
- Develop and execute concepts for the hotel's beverage programs in line and support for the hotel's positioning as one of the leading hotel's in Asia.
- Create a culture of excellence and around the most enticing beverage program, cigars, innovative cocktail menus aligned with brand positioning and market trends
- Research emerging spirits, ingredients, techniques, and industry trends to keep offerings competitive
- Design seasonal, promotional, and event-specific beverage programs
- Become a destination for guest bartender shfits
- Aspire to be among the best bars in Asia and Singapore
- Oversee daily bar operations across all outlets
- Establish and maintain beverage preparation standards, recipes, and presentation guidelines
- Monitor inventory, ordering, storage, and stock rotation processes
- Develop and manage beverage budgets and forecasts
- Analyze beverage sales, costs, margins, and profitability
- Implement cost control measures to minimize waste and optimize inventory
- Negotiate pricing and contracts with suppliers and distributors
- Conduct regular quality audits and operational reviews
Drive Service and Operational Excellence
- Ensure exceptional guest experiences through consistently high beverage quality and service standards
- Engage with VIP guests and support premium events
- Represent the organization at industry events, competitions, media engagements, and brand partnerships
- Build relationships with spirit brands, distributors, and industry influencers
- Ensure all beverage programs comply with health, safety, sanitation, and liquor licensing regulations
Manage Team
- Ensure that colleagues are adequately trained to carry out their respective tasks in a professional manner
- Ensure a fair colleague's appraisal and evaluation process
- Identify training needs of the division and implement a training plan in conjunction with the department heads to close gaps
- Support and actively participate in the planning and execution of the hotel's overall staff development and retention efforts
Talent Profile
- Minimum 8 years of experience in beverage operations, or mixology in luxury hospitality
- Prior experience in creating beverage programme
- Prior experience in managing a team
- Strong knowledge of spirits, wines, beers, cocktail creation, and beverage trends
- Good in financial and commercial management
- Menu engineering and cost optimization
