Job Description

Job Scope / Responsibilities

  • Prepare and cook authentic Chinese cuisine for passengers and crew

  • Ensure food quality, taste, and presentation meet cruise line standards

  • Handle high-volume cooking in a fast-paced galley environment

  • Follow strict food safety, hygiene, and sanitation procedures (HACCP)

  • Manage food preparation, storage, and portion control to reduce wastage

  • Work closely with the Executive Chef and international kitchen team

  • Assist with menu execution, special events, and themed dining

  • Comply with maritime safety rules and onboard operational procedures

Requirements / Qualifications

  • Proven experience as a Chinese Cook (restaurant, hotel, or catering background)

  • Strong knowledge of Chinese cooking styles (e.g. Cantonese, Sichuan, stir-fry, wok skills)

  • Experience in high-volume or hotel kitchens is highly preferred

  • Able to work long hours, shifts, and under pressure

  • Good understanding of food hygiene and safety standards (HACCP preferred)

  • Team player with good discipline and adaptability to shipboard life

  • Physically fit and able to work onboard for contract periods

  • Prior cruise ship experience is an advantage but not mandatory
