The head chef will be responsible for developing and preparing specialized confinement dishes. The incumbent will be required to manage kitchen operations including menu planning and costing, organizing special events, developing new dishes, maintaining food quality standards and comprehensive product knowledge.
- Experience and extensive knowledge in cooking Chinese cuisine or confinement food.
- Must be able to operate kitchen efficiently and supervise a team of staff.
- Keep track of all inventory, recipes and ensure quality of food is always at its best.
- Control and monitor the optimum food cost to yield the maximum amount of outlet profit and maximum guest satisfaction
- Basic understanding of food nutrition, provide direction for confinement menu development and implementations
- Develop the kitchen SOP and ensure that all kitchen staff is adhering the compliances
- Provide quality food products for our guests and support in achieving all goal designated by the Management team
- Produce all dishes and recipes to a high standard of quality and presentation
- Ensure all dishes are served at the correct portion size, quality and temperature
- Check that the quality of food prepared by staff meets the required standard and make necessary adjustments
- Assist in daily purchasing and receiving of goods and ensure the quality of goods delivered by suppliers
- Ensure that all Health and Safety legislation and guidelines are implemented, adhered to and reviewed regularly, in respect of kitchen production, employees, machinery, equipment and hygiene
- Follow Food & Beverage Safety and Hygiene policies and procedures and ensure proper storage methods.
REQUIREMENTS
- Able to work independently
- Familiar with Chinese Herb / Confinement knowledge
- 6 days a week
- Min 5 years related experience in Chinese Restaurants. Applicants with more than 2 years of work in confinement centre will be given priority
- Positive, friendly, professional and confident, with good interpersonal skills
- Familiar with HACCP requirements
- Knowledge of Health and Safety rules and procedures.
