The Chinese Banquet Chef is responsible for the Chinese Kitchen and the preparation of food produces superior meals within budget parameters, resulting in a profitable food operation. This role plans meals, supervises and coordinates the work of Chefs, Cooks and other Kitchen team members. He/ she is to be familiar with competitive operations with regards to pricing, quality and merchandising.
Responsibilities
What will you be doing
As the Chinese Banquet Chef, you will be responsible for performing the following tasks to the highest standards:
Culinary Operations & Food Quality
Plan, prepare, and implement high-quality food products for restaurants and banquet functions.
Work seamlessly with recipes, standards, and plating guides, ensuring adherence to pre-set recipes, portion controls, and costing.
Prepare menus and new dishes according to timelines, including items for food tastings and photo sessions.
Monitor food quality, quantity, and presentation, ensuring economical usage of ingredients and maintaining required standards.
Ensure all food items are prepared in a timely and accurate manner, with appropriate checks on ingredients for daily menus, à la carte offerings, and seasonal specials.
Be aware of food safety, contamination risks, and proper handling of ingredients in storage and refrigerators.
Hygiene, Safety & Maintenance
Maintain all HACCP standards and ensure compliance with local sanitation regulations.
Oversee the cleanliness, hygiene, and maintenance of kitchen areas, equipment, and work tools.
Ensure team members follow personal hygiene and uniform standards.
Work closely with the Stewarding department to maintain high standards of cleanliness and minimize breakages.
Report faulty equipment and prepare work orders for the Engineering department when required.
Team Leadership & Training
Supervise and coordinate the work of Chefs, Cooks, and other kitchen team members.
Manage training and ensure all team members are certified before assuming responsibilities.
Participate actively in daily chef briefings, monthly team meetings, and other quality initiatives to improve operations and communication.
Maintain a professional and positive attitude toward team members and supervisors.
Ensure all team members understand and adhere to hotel rules, regulations, and SOPs.
Understand, practice, and promote teamwork to achieve departmental goals.
Menu Development & Collaboration
Work closely with the Director of Culinary / Executive Chef on menu planning, special promotions, and determining daily production requirements.
Propose new menu items and seasonal concepts with the guidance of the Director of Culinary / Executive Chef.
Follow up on new recipes, work methods, and special or promotional dishes as instructed.
Liaise daily with the Director of Culinary / Executive Chef regarding operational challenges to ensure smooth service delivery.
Cost Control & Administration
Monitor and control food costs to ensure maximum profitability and guest satisfaction.
Exercise maximum control over wastage.
Assist with inventory taking and purchasing decisions for ingredients and food items.
Ensure recipes and costings are established and regularly updated.
Review team members timesheets and leave records for accuracy.
Other Responsibilities
Work offsite or perform tasks outside the kitchen when necessary.
Respond effectively to guest requests and feedback.
Attend management and operations meetings as required, and conduct briefings when the Director of Culinary / Executive Chef is absent.
Carry out any other reasonable duties as assigned.
Qualifications

Skills
A Chinese Banquet Chef serving Hilton Brands is always working on behalf of our Guests and working with other Team Members. To successfully fill this role, you should maintain the attitude, behaviours, skills, and values that follow:
High school graduate or education in culinary.
At least 15 years of Kitchen experience and supervisory level in a 5-star hotel, with a minimum of 10 years experience in Chinese cuisine.
Good command in English, both verbal and written to meet business needs.
Up to date knowledge of local sanitation regulation.
Possess a valid Food Hygiene certificate.
Knowledgeable in HACCP.
Participated In Additional Culinary Classes Or Seminars Is Preferred
