Job Summary
The Bakery Production Manager is responsible for overseeing daily bakery production operations to ensure high-quality products, efficient workflows, food safety compliance, and timely delivery. This role manages production staff, ingredients, equipment, and schedules while maintaining consistency and cost control.
Key Responsibilities
- Plan, organize, and supervise daily bakery production activities
- Ensure consistent quality, taste, appearance, and freshness of all bakery products
- Develop and manage production schedules based on demand and inventory
- Supervise, train, and motivate bakery production staff
- Monitor ingredient usage, minimize waste, and control production costs
- Ensure compliance with food safety, hygiene, and sanitation standards
- Oversee equipment maintenance and coordinate repairs when needed
- Implement standard recipes, portion control, and production procedures
- Coordinate with purchasing, sales, and quality teams
- Maintain production records, reports, and inventory levels
Qualifications & Skills
- Diploma or degree in Baking, Food Production, or a related field
- 3-7 years of experience in bakery/pastry or food production, with leadership experience
- Strong knowledge of bakery processes, recipe standardization, production planning, and semi-automated production methods.
- Understanding of food safety standards (HACCP, GMP, hygiene practices)
- Good leadership, communication, and team management skills
- Ability to work under pressure and meet production deadlines
- Basic computer skills for reporting and inventory tracking
- Must be able to work 5.5 days/per week.
