Job Summary

The Bakery Production Manager is responsible for overseeing daily bakery production operations to ensure high-quality products, efficient workflows, food safety compliance, and timely delivery. This role manages production staff, ingredients, equipment, and schedules while maintaining consistency and cost control.

Key Responsibilities

  • Plan, organize, and supervise daily bakery production activities
  • Ensure consistent quality, taste, appearance, and freshness of all bakery products
  • Develop and manage production schedules based on demand and inventory
  • Supervise, train, and motivate bakery production staff
  • Monitor ingredient usage, minimize waste, and control production costs
  • Ensure compliance with food safety, hygiene, and sanitation standards
  • Oversee equipment maintenance and coordinate repairs when needed
  • Implement standard recipes, portion control, and production procedures
  • Coordinate with purchasing, sales, and quality teams
  • Maintain production records, reports, and inventory levels

Qualifications & Skills

  • Diploma or degree in Baking, Food Production, or a related field
  • 3-7 years of experience in bakery/pastry or food production, with leadership experience
  • Strong knowledge of bakery processes, recipe standardization, production planning, and semi-automated production methods.
  • Understanding of food safety standards (HACCP, GMP, hygiene practices)
  • Good leadership, communication, and team management skills
  • Ability to work under pressure and meet production deadlines
  • Basic computer skills for reporting and inventory tracking
  • Must be able to work 5.5 days/per week.
