In supporting the School Principals, the responsibilities of the Assistant Chef, will include, but are not limited to:

  • Hygiene & Cleanliness
  • Assist Chef in ensuring Standard Operating Procedures (SOP) and guidelines by Early Childhood Development Agency (ECDA) and Health Promotion Board (HPB) are met.
  • Ensure sanitation regulation and safety standards are met. Check & sign QC checklist daily.
  • Maintain wet and dry product in organized manner, and apply first in first out rules.
  • Maintaining cleanliness in the kitchen at all times. (Table-top, 4 door Chiller, Dry store etc. )
  • Clean/wash kitchen floor daily after operation.
  • Ensure culture of safety at all times.
  • Ensure proper kitchen attire is worn by all kitchen crew at all times. (eg. clean uniform, safety shoes, apron, cap/hair net, gloves etc.)
  • Kitchen Operations
  • Work closely with Chef in in executing roles and duties within the kitchen.
  • Support Chef in covering duties in his/her absence.
  • Ensure food is prepared according to the Menu given.
  • Ensure kitchen electrical and commercial appliances are monitored and maintained regularly (Proper cleaning have to done regularly depending usage of the equipment).
  • To follow through the recipes provided and portion out food set by specific HMCCP Guidelines.
  • Exercise non-wastage of food (maintain food cost).
  • Maintain all equipment within the kitchen.
  • Rubbish/waste in the kitchen must be thrown daily.
  • Supporting Chef in daily kitchen routine and operations.
  • Collaborate with Kitchen Crew in preparing meals for children, staff and guests.
  • Plan and execute the daily kitchen schedule for the different duties (distribution and portion of meal to the quantity of each classes).
  • Oversee the preparation of food to ensure that quality standard are consistent. Check & sign QC checklist daily.
  • Ensure timelines are met for serving of food 3 times a day (Breakfast, Lunch and Teabreak).

  • Able to perform additional duties as requested by the Centre as and when required
